Ingredients
For the beef patties
600g ground beef (20% fat)
Vegetable oil
To Assemble
4 burger buns, halved
4 slices mild Cheddar cheese
4 iceberg lettuce leaves, torn into large pieces (or use peppery rocket if you prefer a stronger flavour)
½ small red onion, sliced very thinly
Method
Divide the beef into four equal pieces and shape into rounds with your hands without overworking the meat.
Lay a large piece of parchment paper on your worktop and place the burgers spaced evenly. Add another piece of parchment paper on top and with your hands, flatten the burgers into patties. Remove the top layer of paper and season with salt, black pepper and brush with some vegetable oil. Turn the patties and repeat the process with the other side.
Preheat your barbeque until very hot, but make sure there are no flames anymore and add the burgers. Cook for about 3 – 4 minutes on the first side, or until a nice crust is developed.
Flip the burgers and carry on cooking for another 2 minutes. If you are adding cheese, now it is the time to place it on top of the burgers, and if possible, cover the barbeque with a lid, so the cheese melts faster. Remove the burgers from the barbeque and rest for 5 minutes.
