500g minced Turkey (dark meat ideally)
100g parmesan cheese, grated
100g fresh breadcrumbs
Small bunch of spring onions, finely chopped
2tbsp. Dijon mustard
1 egg, beaten
1 garlic clove, grated
Combine all the ingredients in a bowl with some salt and pepper and gently mix without overworking. Scoop a spoonful worth of the mixture and pan fry very quickly to check the seasoning and adjust accordingly. Divide the mixture into four patties, place on a tray, cover, and refrigerate for at least 30 minutes before cooking.
Preheat a grill over a high heat and when ready, lightly grease the patties with vegetable oil and cook for 5 minutes per side. Here you could add the optional sliced cheese on top for the last minute, so it melts.
