Method
Place the sweet potato on a Perforated Steam Container and cook on 100C for 15 minutes. When the time has elapsed, add the broccoli on another tray and steam alongside the sweet potato for another 5 minutes on 100C. Leave to cool.
Preheat the Steam Combination Oven on Combi Fan Plus 180C, 0% humidity.
Heat the oil in a frying pan. Add the spring onions, chestnut mushrooms and squash and fry for 5 minutes. Add the garlic and fry for 30 seconds.
Tip into a bowl and leave to cool. Add the chopped broccoli. Scoop the sweet potato out of the skin into the bowl, and add the breadcrumbs and Parmesan cheese. Mix well and shape into 12 croquettes.
