How to Take the Stress Out of a Dinner Party

Advice from Lorcan and Fin Spiteri from Miele’s Culinary Collective

Good food, a welcoming drink and time around the table. Discover a more relaxed approach to entertaining, with inspiration from Lorcan and Fin Spiteri and a little help from Miele.

With the festive season just around the corner, thoughts are turning to gathering friends and family around the table. But between planning the menu, pouring drinks and bringing everything together, it can be easy to spend more of the evening in the kitchen than with your guests.

At Miele, we believe the kitchen should give you the freedom to enjoy cooking and sharing food. Brothers Lorcan and Fin Spiteri, part of Miele’s Culinary Collective, bring complementary experience in cooking and hospitality. At their family’s west London pub, The Latimer, Lorcan leads the kitchen, while Fin draws on his background in bars, restaurant management and service to help shape the guest experience.

Their approach offers plenty of inspiration for entertaining at home. Here, we bring it together with practical preparation tips and ways our appliances can help, from the first welcome drink to the washing up.

Start with the welcome

“You want people to feel at home as soon as they arrive,” says Fin. “Have something ready to offer them and give yourself a chance to say hello. It’s easy to get carried away at Christmas and take on too much, but you want to enjoy the evening as well.”

Think about the first few minutes of the evening. Have glasses ready, layer the lighting, put out something simple to nibble on and decide where coats will go. Set the table and choose the music before you begin the final cooking. Those small jobs are much easier to do before anyone arrives.

Choose food you will enjoy cooking

“Cook something you know you can do well,” says Lorcan. “You don’t have to make every course complicated. If the main needs a bit of attention at the last minute, have the pudding ready in the fridge. It just gives you one less thing to think about.”

Lorcan has spoken about the pleasure of simple food at home, from good-quality lamb chops with salad to memories of his grandmother’s spinach and ricotta ravioli with butter. Take inspiration from that confidence in a few good ingredients when planning your own menu.

Slow cooking is another way to spread out the work. At Miele’s Host’s Kitchen at Soho Food Festival, the brothers’ Cook School explored using beer, wine, cider and whisky to add flavour to slow-cooked dishes. For your own menu, a braise can make a welcoming centrepiece, with much of the preparation completed before guests arrive.

Give drinks a little thought beforehand
When it comes to drinks, Fin suggests keeping things manageable. “Pick one cocktail you like and get everything ready beforehand. You don’t want to be hunting for ice or chopping garnishes when people arrive. And have something good for anyone who isn’t drinking alcohol, too.”

Chill bottles, prepare garnishes and check your ice supply in advance. If someone else is helping you host, putting them in charge of drinks leaves you free to finish the food.

Make space before you start
A little refrigerator organisation makes preparing ahead much easier. Before you shop, check what you already have and clear space for the dishes you plan to make. Think about where the dessert will sit and whether your serving platter will actually fit.

Our American Style fridge-freezers use a French Door format to give easy access to a wide refrigerator compartment. Across the range, DailyFresh, PerfectFresh Pro and PerfectFresh Active offer different approaches to keeping fresh ingredients in suitable storage conditions, depending on the model.

On selected models, Freeze&Cool lets you switch a compartment between freezing and refrigeration, creating extra chilled space for prepared dishes or drinks when you need it. Plan ahead if you want to change its use, and find another suitable home for any frozen food first. Ice and water features vary by model, too: options include an IceMaker and water dispenser, or an ice and water dispenser. They are useful when welcoming a group and preparing several drinks at once.

Let your appliances lend a hand
Knowing what your appliances can do is useful long before the first guest arrives. On selected Miele ovens, a food probe monitors the core temperature of meat or fish, helping you judge when it is ready. Automatic Programmes can also take care of the cooking settings for a range of dishes.

Food Probe

Our combination steam ovens bring steam cooking and conventional oven functions together. DGC Pro models can combine steam with heat for roasting and baking, while Moisture plus on selected ovens introduces bursts of steam to help with succulent roasts and bread with a well-browned crust.

FoodView on selected connected ovens uses an integrated camera to show you what is happening inside via the Miele app. You can check cooking progress from your phone while staying with your guests.

If the conversation runs on, TasteControl on selected ovens opens the door slightly and rapidly cools the oven after cooking to help prevent food from continuing to cook. It can then keep food warm until you are ready to serve.

There is help on the hob too. Selected models in our KM 8000 induction hob range communicate with M Sense cookware, adjusting the power in response to temperature measurements from the pan. This helps prevent burning and boiling over, reducing the need for constant adjustment as you bring the meal together.

Full-surface induction on selected models also gives you greater flexibility over where you position cookware across the cooking area, useful when several pans need to be on the hob together.

Keep serving simple
“I like putting dishes in the middle of the table and letting everyone help themselves,” Lorcan adds. “It feels generous, and you’re not standing in the kitchen trying to finish six plates at once. Get it all on the table, sit down and enjoy it while it’s hot.”

Put serving spoons and trivets out ahead of time. Warm plates before dinner, too: our Gourmet Warming Drawers can heat crockery and keep cooked food warm while you finish the other elements. A little breathing space at this point can make sitting down together feel much calmer.

Think about the first drink and the last coffee

Serving drinks at the right temperature adds a thoughtful touch. Selected Miele wine conditioning units have separately controlled temperature zones for different wines, while flexible shelving such as FlexiFrame accommodates bottles of different shapes and sizes.

After dinner, our bean-to-cup coffee machines can help you bring coffees to the table with less effort. OneTouch for Two prepares two drinks of the same type at once, while user profiles on selected machines save favourite settings for a more personal cup.

Give yourself an easier finish
Start the evening with an empty dishwasher so preparation bowls and utensils have somewhere to go. Clear what you need between courses, then return to your guests.

AutoDos with PowerDisk on selected Miele dishwashers takes another task off your list, automatically dispensing the right amount of detergent at the right time for the programme. There is no need to add a tablet for each wash.

For a quick turnaround of normally soiled crockery, the 58-minute QuickPowerWash programme is useful while guests enjoy dessert or coffee. Miele’s PowerDisk is compatible with QuickPowerWash, delivering cleaning and drying results in under an hour. That helps you get a load finished and make room for the cooking dishes afterwards.

For dishwasher-safe pots, pans and oven dishes with stubborn food deposits, the Intensive 75°C programme provides a more powerful clean to tackle the heavier soiling left after cooking for a crowd.

Glass care deserves attention, too. Brilliant GlassCare helps look after dishwasher-safe glassware, while selected models offer a Gentle programme for lightly soiled, heat-sensitive items and FlexCare glass holders to support delicate stemware. Dedicated drying features can also reduce the finishing work. Always follow the glassware manufacturer’s care advice.

Once the food is served, give yourself time to enjoy it. You have invited people into your home; make sure you get to spend the evening with them.

Quality beyond the festive season
The appliances that help with Christmas entertaining have a job to do throughout the year. At the Which? Awards 2026, Miele was named Home Appliance Brand of the Year and Consumer-First Brand of the Year. Which? tested 35 Miele products across seven categories during the preceding year, with 63% receiving a Best Buy recommendation, the highest Best Buy percentage across the brands assessed.

The Consumer-First award recognised our video support service, Miele Remote Assist, which connects customers with trained experts to diagnose and, where possible, resolve appliance issues remotely.

Product features and programmes vary by model. FoodView requires a compatible connected appliance and the Miele app; connected services are subject to the applicable set-up and service requirements.
