Ingredients
1 medium head of cauliflower, cut into florets
40g butter
40g plain flour
400ml whole milk, warmed
1tsp. English mustard
100g mature cheddar cheese, grated
2tbsp. panko breadcrumbs
Method
Place the cauliflower florets in a perforated steam container and cook in a Miele Steam Oven for 4 minutes at 100°C. When ready, remove from the steam oven and place in a shallow heatproof dish.
Melt the butter in a small saucepan over a medium heat and then, add the flour. Cook for 2 – 3 minutes and then add the milk a little at a time, stirring constantly.
Add the mustard, half the cheese, salt and pepper and check the seasoning.
Preheat a Miele Oven on Fan Grill 200°C, pour the sauce over the cauliflower and top with the remaining cheese, breadcrumbs and parsley.
