Cauliflower Cheese

A family favourite, this cauliflower cheese recipe is quick and easy to prepare and is the perfect side dish to accompany a Sunday roast. Steaming the cauliflower before cooking helps to keep the shape and texture of the florets


  • 1 medium head of cauliflower, cut into florets

  • 40g butter

  • 40g plain flour

  • 400ml whole milk, warmed

  • 1tsp. English mustard

  • 100g mature cheddar cheese, grated

  • 2tbsp. panko breadcrumbs

  • Small bunch of parsley leaves, finely chopped


  1. Place the cauliflower florets in a perforated steam container and cook in a Miele Steam Oven for 4 minutes at 100°C. When ready, remove from the steam oven and place in a shallow heatproof dish.

  2. Melt the butter in a small saucepan over a medium heat and then, add the flour. Cook for 2 – 3 minutes and then add the milk a little at a time, stirring constantly.

  3. Add the mustard, half the cheese, salt and pepper and check the seasoning.

  4. Preheat a Miele Oven on Fan Grill 200°C, pour the sauce over the cauliflower and top with the remaining cheese, breadcrumbs and parsley.

  5. Transfer the baking dish into the middle shelf of the oven and cook for about 15 minute or until golden and bubbling.
