Brussels Sprouts

with Pancetta and Chestnuts

We can all agree that Christmas Day is not complete without Brussels Sprouts on the table. Steaming rather than boiling will preserve the sweet, nutty flavour, while the pancetta and chestnut adds texture.

Ingredients

  • 1kg Brussels sprouts, sliced into quarters
  • 300g pancetta, cut into cubes
  • 10 chestnuts but into quarters
  • Salt and pepper

Method

  1. Place the Brussels sprouts onto a perforated steam tray. Steam in a Miele Steam Oven at 100°C for 4 - 5 minutes.

  2. Meanwhile, gently fry the cubes of pancetta and chestnuts in a large frying pan.

  3. Add the steamed Brussels sprouts to the pancetta and fry for 2 minutes. Season to taste.
