Braised Red Cabbage

A staple festive side dish packed with plenty of flavour, this Braised Red Cabbage is a perfect accompaniment to turkey, ham, or duck.

Serves 6-8

Ingredients

  • 1 red onion
  • 100ml red wine
  • 100ml red wine vinegar
  • 4tbsp soft brown sugar
  • 2tbsp red currant jelly
  • 1 small red cabbage
  • 75g sultanas
  • Salt and pepper to taste

Method

  1. Fry off the red onion in some oil. Add the red wine, red wine vinegar, brown sugar and red currant jelly and reduce down by half or until slightly sticky. Add the cabbage and sultanas, stir well. Transfer to a solid steam container.

  2. Steam at 100°C for 1 hour.
