Christmas Pudding Ice Cream

Make the most of any leftover Christmas pudding with this indulgent dessert that is sure to delight.


  • 300ml double cream
  • 300ml whole milk
  • 2 vanilla pods, seeds removed
  • 6 large egg yolks
  • 140g sugar
  • 125g good quality Christmas pudding, crumbled


  1. Place the double cream and milk in a Miele DGG2 shallow solid steam container with the vanilla seeds and pods. Stir well. Place in a Miele Steam Oven and steam for 7 minutes at 100°C, uncovered.

  2. Mix the egg yolks and caster sugar together in a large bowl.

  3. Whisk the infused cream into the egg mixture. Pour the custard mixture back into the DGG2. Steam at 90°C for 6 minutes.

  4. Remove from the steam oven and whisk well to create a smooth custard. Set aside to cool then chill in a fridge.

  5. Transfer the custard to an ice cream machine and churn until set. When set, remove from the machine and stir through the crumbled Christmas pudding. Spoon into a plastic container and store in the freezer until ready to serve.
