Christmas Pigs in Blankets

with Sage and Apricot

A Christmas Day staple, these pigs in blankets are enhanced with the flavours of apricot and sage for a truly delicious festive side dish.

Ingredients

  • 800g pork and spiced apricot sausages
  • 2 packs of oak smoked dry cured streaky bacon
  • 12 dried apricots, finely chopped
  • 3 spring onions, finely chopped
  • 1 tsp dried sage
  • Black pepper

Method

  1. Cut open the sausages and put all of the sausage meat into a large bowl. Discard the skins.

  2. Add the apricots, spring onions, sage and black pepper to the sausage meat and mix well.

  3. Take a dessert spoonful of the mixture and shape into patties.

  4. Wrap the bacon around the patties and trim.

  5. Place on a baking tray.

  6. Bake in a Miele oven on the Fan Plus setting at 190°C for 20 -25 minutes.
