Roasted Parsnip Crisps

with Wholegrain Mustard and Honey

A fun twist on traditional honey roasted parsnips, these parsnip crisps with wholegrain mustard provide a satisfying crunch.


  • 2 medium parsnips
  • 1 tbsp honey
  • 1 tbsp wholegrain mustard
  • ½ tsp sea salt, finely crushed
  • 2 tbsp mild olive oil


You will need: 2 non-stick silicon mats

  1. Preheat the Miele Warming Drawer on the Food setting, at the 1st temperature square.

  2. Remove the parsnips outer skin with a speed peeler. Then using your speed peeler, shave the parsnip length wise until you get to the core. Turn the parsnip and carry on the process until all the flesh is removed. This will produce thin long strips.

  3. Place all the rest of the ingredients into a bowl along with the parsnips strips. Toss the parsnips around making sure they are evenly coated.

  4. Place the silicon mats onto baking trays and evenly place the parsnips across the mats making sure none are overlapping each other.

  5. Place into the preheated warming drawer, one tray on the base and one on the wire rack and cook for 12 hours until golden and crunchy.
