In season asparagus is the star ingredient for this delicious side dish, ideal for an alfresco dinner party or picnic
200g green asparagus
160g red chicory / radicchio, cut in half
100g pearled spelt
For the tahini dressing:
1 lemon, juiced
1 garlic clove, grated
2tbsp. extra virgin olive oil
50ml iced water
Small bunch of parsley, leaves picked
Small bunch of mint, leaves picked
Place the spelt on a solid steam container, add enough water to cover and steam in a Miele Steam Oven at 100°C for 25 minutes.
In the meantime, preheat a Miele griddle plate over a medium high heat and grill the asparagus and radicchio until charred and cooked. Keep aside until needed.
For the dressing, mix all the ingredients together and if the dressing is too thick, add a little extra water.
To serve, combine the spelt, vegetables and herbs in a bowl, arrange nicely on a plate and drizzle with the dressing.
